Starting his career at the dining restaurant The Reverie Saigon and being the head chef of Hẻm restaurant for many years, Thieu's calm demeanor hides a quiet but intense passion for food and culture. For him, the kitchen is not just a place to create dishes - it is a sacred space, where time is brewed, flavors are refined, and memories are conveyed through each layer of ingredients. Chef Thieu does not consider himself a creator, but a connector. A connection between technique and emotion, between region and season, between modernity and tradition. Each dish he serves to diners carries meticulousness, depth, and a very personal part of himself - quiet, strict and respectful.
